In the heart of the Fès medina, our riad opens the doors to an authentic, warm and unforgettable culinary experience: Moroccan cooking workshops, designed for travelers curious to discover the secrets of traditional Moroccan gastronomy. It all starts with a stroll through the lively streets of the old town, accompanied by our chef or a member of the riad family. Together, you'll make your way to the souks, true sensory treasures where stalls abound with fresh fruit, vegetables, aromatic herbs, tasty meats, olives and, of course, a bewitching array of spices. Cumin, cinnamon, ginger, turmeric, saffron or ras el hanout: each spice has its own history, role and fragrance. Learn how to recognize them, choose them and marry them according to ancestral recipes.
Back at the riad, in a friendly, family atmosphere, the workshop takes place in our traditional kitchen, where skills are passed on with passion. You'll be able to choose from a wide range of dishes emblematic of Moroccan cuisine: the famous tajine in all its forms (lamb with prunes, chicken with preserved lemon, seasonal vegetables), royal couscous, flaky pastilla with chicken or fish, stuffed briouates, fragrant harira or hot and cold Moroccan salads.
The workshop is suitable for all levels, and you'll take part in every stage of preparation: cutting, seasoning, slow cooking in terracotta dishes, presentation... At the end of the workshop, it's time for a tasting session. Seated in the flower-filled patio or on the riad's terrace overlooking the rooftops of Fez, you'll share your meal with the other participants and members of our team, in a relaxed atmosphere, just like at home.
